Banana Coconut Cake
Cake Ingredients
1 1/2 cups Self-Raising Wholemeal flour
1 cup Plain flour
2 teaspoons bicarbonate soda
1 cup Unsweetened coconut
1 cup Walnuts; chopped -- optional
2 Eggs
2/3 cup Butter
2/3 cup Honey
1/2 cup Cream cheese
1/2 cup Instant milk
1 teaspoon Vanilla
3 Bananas; very ripe & mashed
Directions
1. Preheat oven to 350F or 180 C.
2. Mix well in a large bowl the flour, soda, coconut and walnuts.
3. Mix eggs, butter, honey, cream cheese, instant nonfat milk, vanilla and tofu in
blender until smooth. Use spatula to keep mixture in blades if necessary.
4. Pour blended ingredients into the flour mixture. Add bananas; mix well.
5. Turn into a floured 10" buttered and floured springform pan. Cook for 45 minutes.
