Peanut & Marshmallow Slice (Yeah Baby!)
Try these delicious sweets using peanuts, peanut butter, marshmallow and
chocolate ... yum!
Ingredients
- Base
- 1 & 1/2 cups plain flour
- 1/2 teaspoon baking powder
- 2/3 cup brown sugar, firmly packed
- 1/2 cup (125 grams) butter, softened
- 1 teaspoon vanilla
- 2 egg yolks
- 1 x 250g packet marshmallows
- Topping
- 2/3 cup golden syrup
- 1/4 cup butter
- 2 teaspoons vanilla
- 1 cup peanut butter
- 150g dark chocolate buttons
- 2 cups Rice Bubbles
- 2 cups roasted, unsalted peanuts
Method
- Preheat oven to 200C. Grease a 20cm x 30cm lamington pan. Line the base
and the two long sides with baking paper, extending 5cm above the edges of the
pan.
- Base:
Combine the sifted plain flour and baking powder, sugar, butter,
vanilla and egg yolks in a medium bowl and mix until the ingredients are well
combined.
- Press the mixture evenly over the base of the pan. Cook for about 12
minutes or until lightly browned. Remove from oven.
- Arrange marshmallows evenly over hot base (use all). Cook for a further
two minutes or until marshmallows begin to melt. Cool while preparing topping.
- Topping:
Heat golden syrup, butter, vanilla, peanut butter and
chocolate buttons in a large pan. Stir until chocolate is melted or mixture is
smooth. Stir in Rice Bubbles and peanuts and mix well.
- Spread topping over marshmallows. Refrigerate until firm.
Serve cut into squares or fingers.
NB. For a finer textured topping, try chopped peanuts

Peanut Oat Slice
Ingredients
- 1/2 cup honey
- 1/2 cup crunchy peanut butter
- 3/4 cup wholemeal self-raising flour
- 1 cup rolled oats
- 1/3 cup unsalted roasted peanuts, finely chopped
- 1/4 cup finely chopped dried apricots
- 1/4 cup finely chopped dried apples
- 1/4 cup cup currants
- 2 tablespoons sunflower seed kernels
- 2 eggs, lightly beaten
Method
- Preheat oven to 180C. Grease a shallow rectangular pan, line base and the
two long sides with baking paper, extending the paper 5cm above the edge of
the pan.
- Combine honey and peanut butter in a small saucepan, stir over heat until
melted. Remove from heat.
- Combine remaining ingredients in a large bowl with honey mixture and mix
well.
- Spread mixture over base of the prepared pan with wet hands.
- Cook for about 20 minutes or until lightly browned. Cool in pan before
cutting into bars
